Well yesterday I looked in my fridge and wondered what I was going to make for dinner- Thomas and I are eating whole foods now, (aka real foods, organic foods, etc). As I looked through my fridge I found some organic romaine lettuce, organic sweet corn on the cob, some black beans, and eggs. Genius!
I ripped up some lettuce, washed it and threw it into a medium bowl, added some black beans, cut off the kernels and threw that into the bowl, grabbed my last 2 eggs and hard boiled them, and took a handful of raw sunflower seeds threw that in there too.
After looking at my creation, I began to wonder what other things I could throw together and be completely happy about it. Eating Real Food is the best thing that ever happened to me. Thomas is still learning how to "like" it all but he is trying. I mean we don't have a whole lot of money so things need to go as far as possible.
Last night I was able to go to the store and buy some local veggies and fruits. I got other whole foods to last us a while too. Today I made some strawberry rhubarb jam- completely organic (I will post the recipe for this next). . I took half of my organic blueberries and froze them so that I can have organic fruit for my homemade cereal. We also got our garden put in today. Planted some corn, zucchini, yellow summer squash, and green onions. There is also a ton of Rhubarb plants in the garden that have been in Thomas' family for years. (I took some of the rhubarb and froze it as well, along with some strawberries my sister bought for me at the Farmer's market today)
Well I just want everyone to know Salad can be fun and easy!!
