Okay so after looking up some recipes about Quinoa, I came up with one of my own, with other recipes guidelines. I cooked this last night for my husband and I and we loved it. He added some italian dressing to his to give it a little more zesty flavor. I found that after I ate it, I felt full, but not like I was going to explode and it kept me full and energized until bed time! So here it is:
Ingredients:
1 Package Imitation Crab Meat
3 Ears of Corn
2 Cups Quinoa
1 Can of organic black beans
1 bag of organic frozen peas (in the steamable bags)
1 Tbsp Fresh Lemon Juice*
2 Tbsp Lemon Zest *
1/2 Tbsp Honey
1/2 Stick of organic unsalted butter (melted)
salt
pepper
*1 lemon is good for both the lemon zest and the fresh lemon juice
Directions:
1- Get a large pan and cook the corn. basically fill the pan until water is just above the corn. as soon as it starts to boil turn off the burner and leave the lid on for about 5 minutes.
2- put your lemon zest, lemon juice, honey, black beans, peas and butter into a bowl and mix together.
3- Pull the corn from the pan and cut the corn off of the cob- add to bowl
4- Cut up the imitation crab meat- add to bowl
5- In a sauce pan add 4 cups of water and 2 cups of quinoa- follow directions on the bag as to how long to cook
6- when the quinoa is finished add it to the bowl and mix everything together.
7- serve in bowls!
dig in! it doesn't look that wonderful but tastes good!
