Okay so everyone knows that when you are trying to make the change from processed fattening foods to healthier foods it is tough... especially when you like sweets or salty snacks. Well right now as a health coach, I am changing my husband's and my diet a little at a time. I started making as much from home as I possibly can- that way I know exactly what is in my food. I have made applesauce, strawberry applesauce, bread, granola bars, cereal, etc. Well lately I have been at home after dinner and just wanting to eat something tasty but not fattening because I have overwhelming guilt when I eat something I know I will regret later... So I made some oatmeal cookies... and man are the delish!
so here it goes:
1 Cup Large Oats
3/4 Cup Steel Cut Oats
1 Cup Whole Grain Wheat Flour
1/4 Cup Flax Seed
1/4 Cup Fiber One Powder
1/2 Cup Honey
1/2 Cup Pure Oil (almond, olive, coconut)
1/3 Cup Coconut
1Large Egg
1/2 Tsp Baking Soda
1/2 Tsp Baking Powder
Healthy Shake of Cinnamon
Healthy Shake of Nutmeg
About 8 packets of Cane ?Sugar
Put all the ingredients together and mix well. Now the mixture will be sticky but that is good. Put parchment paper out onto 2 cookie sheets. Use 1 Tbsp spoon and drop the cookies onto the parchment paper... make sure they are packed together really well. Cook at 350 degrees for about 16 minutes
